![]() ![]() They’ll be rock hard for weeks and then, boom, mush. One thing you may have noticed about pears, they are impossible to catch at perfect ripeness. If you have honey leftover, it’s fantastic on cheese, brushed onto pizza crust, drizzled over fruit. Once the pear tarts are cooked, drizzle them with spicy honey. A drizzle of spicy honey gives these an unexpected kick. Scoring a rim and poking the middle of the puff pastry gives these a clean look. This keeps the goat cheese from drying out (and if you use blue, it will keep it from melting into a puddle). We like to crumble the cheese (we used goat, but blue cheese would also be fantastic) over the hot tarts as soon as they’re out of the oven rather than bake them with the cheese on. Then when you’re ready, brush the edges with egg and bake them off. You can even assemble the tarts, cover them with plastic wrap, and refrigerate them overnight. The caramelized onions can be made a day or two ahead, the pears can be roasted the hours or even the day before, and the chili honey will last for weeks in the refrigerator. The great thing is that several of the elements can be made days, even weeks in advance. The toppings can be made in advance and even assembled the day before, so all you need to do the day of the party is pop them in the oven. ![]() It’s so satisfying that these tarts, maybe with a simple cheese board, are all you need to wow and satisfy your guests. We recently found a combination that requires a little more prep time, but is so worth it: roasted pears, caramelized red onions, goat cheese and chili-infused honey. It’s a matter of minutes to throw a few ingredients onto a pastry square and bake it. In fact, the day before a party, we often defrost a box just on the off chance that we’ll need to make more vittles. That’s when a time-saver like puff pastry sheets becomes our best friend in the kitchen. While we love throwing parties around the holidays, we inevitably get so busy that what we envisioned as a relaxed morning of prepping nibbles ends up being a scramble to get food on the table before our famished guests start experimentally sprinkling salt and pepper on the cats. Here’s how we fell in love with pear tarts. A drizzle of spicy chili-honey puts it over the top. Allow to cool for at least 5 minutes before slicing and drizzle with additional maple syrup if desired. These are what you want for a holiday party: buttery puff pastry pear tarts topped with balsamic-caramelized red onions and goat cheese crumbles. Bake the tart for 15-17 minutes or until puff pastry is golden brown. Brush the outer border of puff pastry with the remaining melted butter. Combine 1 tbsp melted butter, maple syrup, cinnamon and ginger and brush generously over the pears ( I like to use this silicon pastry brush). Layer sliced pears onto the puff pastry within the border ( feel free to layer the pears in any pattern you’d like). Using a butter knife score a border (do not cut all the way through) about 1 inch wide. Transfer to the parchment paper and place on a baking sheet. Unfold and roll out the puff pastry into a rectangle about 9×13 in in size. I prefer to cut the pear in half length wise and then slice using a sharp knife but you can also use a mandolin if you prefer. While the oven is preheating go ahead and slice your pears. Thanks to the puff pastry this tart comes together in a snap. Couple this connection with "devibe" bars from Teeness, the cabability of the Capto system is huge from light to HD cutting and all sorts of accuracy ranges to boot. The boring bar is a C6 bar with a SL coupling head and a C6 extension in a C6 (cam operated draw bar) block mounted on the OD of the turret.
