![]() ![]() They’ll be rock hard for weeks and then, boom, mush. One thing you may have noticed about pears, they are impossible to catch at perfect ripeness. If you have honey leftover, it’s fantastic on cheese, brushed onto pizza crust, drizzled over fruit. Once the pear tarts are cooked, drizzle them with spicy honey. A drizzle of spicy honey gives these an unexpected kick. Scoring a rim and poking the middle of the puff pastry gives these a clean look. This keeps the goat cheese from drying out (and if you use blue, it will keep it from melting into a puddle). We like to crumble the cheese (we used goat, but blue cheese would also be fantastic) over the hot tarts as soon as they’re out of the oven rather than bake them with the cheese on. Then when you’re ready, brush the edges with egg and bake them off. You can even assemble the tarts, cover them with plastic wrap, and refrigerate them overnight. The caramelized onions can be made a day or two ahead, the pears can be roasted the hours or even the day before, and the chili honey will last for weeks in the refrigerator. The great thing is that several of the elements can be made days, even weeks in advance. We recently found a combination that requires a little more prep time, but is so worth it: roasted pears, caramelized red onions, goat cheese and chili-infused honey. Bake the tart for 15-17 minutes or until puff pastry is golden brown. Brush the outer border of puff pastry with the remaining melted butter. Combine 1 tbsp melted butter, maple syrup, cinnamon and ginger and brush generously over the pears ( I like to use this silicon pastry brush). Layer sliced pears onto the puff pastry within the border ( feel free to layer the pears in any pattern you’d like). Using a butter knife score a border (do not cut all the way through) about 1 inch wide. Transfer to the parchment paper and place on a baking sheet. Unfold and roll out the puff pastry into a rectangle about 9×13 in in size. I prefer to cut the pear in half length wise and then slice using a sharp knife but you can also use a mandolin if you prefer. While the oven is preheating go ahead and slice your pears. Thanks to the puff pastry this tart comes together in a snap. You can find puff pastry in the freezer section common brands include Dufour ( made with butter and my preferred choice) and Pepperidge Farm ( made with vegetable based fats and is vegan).
